REGISTRATION

The Soria Gastronómica Congress is completely free, but registration is required to access the presentations and cooking demonstrations.

The maximum number of participants is 500, so don’t miss your opportunity to attend a unique event in which we’ll explore fascinating topics, such as the caterpillar fungus (Ophiocordyceps sinensis), a fungus used in traditional Chinese medicine to boost energy and treat multiple ailments and as an ingredient in popular cuisine. Other topics: The spectacular bridal veil fungus or bamboo mushroom (Phallus indusiatus or Dictyophora indusiata) and different species of the genus Lactarius, such as the exotic indigo milk cap (Lactarius indigo) and the saffron milk cap mushroom (Lactarius deliciosus).

Morels (Morchella spp) and the lobster mushroom (Hypomyces lactifluorum) from Quebec (Canada). Mushrooms from Japanese cuisine such as maitake (Grifola frondosa), enoki (Flammulina velutipes), nameko (Pholiota nameko), buna-shimeji (Hypsizygus tessulatus) and bunapi. Desert truffle (Terfezia claveryi) and black truffle from Soria (Tuber melanosporum).
